Dog-Safe Borcht Inspired By @rachel_blush
When I saw one of my favorite OFTV creators share her family’s traditional Ukranian borscht recipe, I knew I had to try a dog-safe version. What I ended up with was a comforting and aromatic stew that warmed my body and soul from the inside out. Let’s talk about how to make it!
Ingredients:
500g Stew Meat, cut into small pieces
2 Beets, grated
1 Carrot, grated
Potatoes, chopped
300g Cabbage, chopped
2 Red Peppers, chopped
2 Tbs Fresh Grated Ginger
Fresh Cilantro to taste, finely chopped
Fresh Basil to taste, whole
Rosemary to taste, finely chopped
Greek Yogurt to taste
Salt and Pepper to taste
Sunflower Oil
Directions:
Fill a large pot with water and add 2-5 stalks of basil and salt and pepper to taste
Bring the water to a boil
Fry the stew meat in oil until golden brown
Add carrots, red pepper and ginger to the meat and cook for a few minutes
Add the meat mixture to the pot and cook for 45 minutes
Add the beets, potatoes and cabbage to the pot and cook for 15 minutes
Top with greek yogurt and fresh herbs
